Cheese Souffle, or Fondu
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Make the base
Grate the cheese and place it in an enamelled saucepan.
Add mustard flour, white pepper, Cayenne, grated nutmeg, butter, baked flour, and milk.
Stir over low heat until smooth and thick, but do not let it boil.
Remove from heat.
Add the beaten yolks of the eggs.
Beat the mixture for 10 minutes.
Bake and serve
Fold in the beaten egg whites until stiff.
Pour the mixture into a tin or cardboard mold.
Bake in a 400°F (200°C) oven for 20 minutes.
Serve immediately.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whipped whites trap air, which expands in the oven and makes the soufflé rise.
- Parmesan cheese
- Provides rich savoury flavour and body to the cheese base.
- Butter
- Adds richness and smooth texture to the base sauce.
- Baked flour
- Thickens the milk and cheese mixture so it holds its shape.
- Milk
- Forms the liquid base that the flour thickens into a smooth sauce.
The step that matters
Fold in the egg whites. Whites must be beaten until stiff and folded gently. Overmixing deflates the trapped air, so the soufflé will not rise well in the oven.
Swap the white pepper
How well each one fits the dish's main ingredients (cheese, flour, mustard, pepper, nutmeg, butter, milk):
- Cinnamonfits better
- Cardamomfits better
- Thymefits better
- White pepperthe original
Fit is the average pairing score against cheese, flour, mustard, pepper, nutmeg, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
