What each ingredient does

Green pea shells
Provide the base liquid's sugars and flavour as they simmer in water.
Wood-sage or hops
Add bitterness that balances the sweetness of the liquid.
Yeast
Ferments the sugars in the liquid, producing alcohol and carbonation.

The step that matters

Simmer for 3 hours. Simmering extracts sugars and flavour from the shells into the water. Too short a simmer leaves the liquid weak, so the later fermentation has little to work with.
