What each ingredient does
- Black tea
- Provides the main flavor, aroma and astringency as its compounds dissolve into the hot water.
- Water
- Acts as the solvent that extracts flavor compounds from the tea leaves.
The step that matters
Steeping time. Steeping too long over-extracts tannins, making the tea bitter and astringent, while steeping too briefly leaves it weak and flat. Timing controls the balance of flavor.
