Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh wheat
Forms the body of the soup and thickens it as the grains soften and release starch.
Milk
Adds creaminess and a mild sweetness that softens the soup's flavour.
Butter
Adds fat for a richer mouthfeel and helps carry flavour.
Eschalots
Provide a mild onion-like aroma and savoury depth as they cook.

The step that matters

Stirring in the milk, then bringing the soup back to a boil. Milk can curdle or scorch when it boils for a long time or at high heat. Once the milk is added, the soup should be heated just until hot and kept from rolling boil to keep it smooth.

Swap the parsley

How well each one fits the dish's main ingredients (wheat, milk, butter, pepper):

  1. Cinnamonfits better
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Cardamomfits about as well

Fit is the average pairing score against wheat, milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
