Prepare

  1. Break the sponge cakes into pieces.

  2. Boil the milk and pour it over the sponge cake pieces; mash well with a spoon.

  3. Dissolve half the chocolate in a saucepan with 2 tablespoons of water and flavor with 1 inch of split vanilla; remove the vanilla once dissolved.

Layer

  1. In a wetted mold, layer sponge cake, spread some dissolved chocolate, and sprinkle with almonds and ratafia; repeat until finished with a layer of sponge cake.

Finish

  1. Grate the remaining chocolate, then whip the cream with the egg white, vanilla, and 1 teaspoon of sifted sugar; sift the grated chocolate into the whipped cream.

  2. Turn the sponge cake mold into a glass dish, spread the chocolate cream evenly over it, and decorate with almonds.

What each ingredient does

Sponge cakes
Form the bulk of the structure and soak up the milk and chocolate to become soft.
Chocolate
Adds rich flavor and, once cooled with cream, a thick set texture.
Cream
Provides moisture and richness, and forms a light, spreadable topping when whipped.
Egg white
Whipped into the cream to trap air and lighten the topping.
Milk
Moistens the sponge cake pieces so they become tender and easy to mash.
Almonds
Add crunch and a nutty flavor between the layers and on top.

The step that matters

Folding the grated chocolate into the whipped cream. Whipped cream holds air in a fragile foam. Stirring in chocolate too vigorously or too long can deflate it, leaving a dense, runny topping. Fold gently so the cream stays light and the chocolate is evenly distributed.

Swap the almond
