What each ingredient does

Candied cherries
Add sweetness and bright fruit flavor, and decorate the outside of the pudding.
Eggs
Set the custard as they cook, binding the bread and milk into a firm pudding.
Allinson wholemeal bread
Forms the body of the pudding and soaks up the custard as it rests.
Milk
Makes the custard liquid that soaks the bread and sets with the eggs.
Sugar
Adds sweetness to the custard, balancing the richness of the eggs and butter.

The step that matters

Soak the bread before steaming. The bread needs time to absorb the custard fully; if the pudding is steamed too soon, dry patches stay unset and the texture turns uneven when turned out.

Swap the almond
