What each ingredient does

Eggs
Yolks enrich the batter and whites, folded in whisked, lighten its texture as the pudding steams.
Allinson fine wheatmeal
Forms the body of the pudding, giving it structure once steamed.
Golden syrup
Adds sweetness and moisture, and a rich flavour to the pudding.
Vegetable butter
Adds fat, which gives the pudding a tender, moist crumb.

The step that matters

Folding in the egg whites. Whisked whites trap air that gives the pudding lift. Folding gently keeps that air in; stirring hard deflates the batter and leaves a denser pudding.

Swap the raisin

How well each one fits the dish's main ingredients (butter, syrup, egg, milk):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Raisinthe original

Fit is the average pairing score against butter, syrup, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
