Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Peel, wash, and slice the potatoes and onions thinly.

Assemble

  1. Arrange the vegetables and tomatoes in layers in a baking dish.

  2. Dust a little pepper and coarse sea salt between the layers, finishing with a layer of potatoes.

  3. Cut the butter into small pieces and place them on top of the potatoes.

  4. Fill the dish with hot water and bake for 2 hours at 400°F (200°C).

  5. Add more hot water if necessary during baking to compensate for evaporation.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the dish, becoming tender and starchy as they bake.
Butter
Adds richness and moisture to the top layer as it melts during baking.
Onions
Add savoury sweetness that deepens as they cook slowly in the liquid.
Tinned tomatoes
Add acidity and moisture that help flavour the layers as they cook.

The step that matters

Add more hot water during baking. Liquid evaporates during a long bake, and without topping up the potatoes can dry out and scorch. Adding hot water keeps the dish moist and lets the potatoes cook through evenly.

Swap the tomato

How well each one fits the dish's main ingredients (potato, onion, butter, pepper):

  1. Chivefits better
  2. Capsicumfits better
  3. Carrotfits about as well
  4. Tomatothe original

Fit is the average pairing score against potato, onion, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
