Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wipe the meat and trim any excess fat.

  2. Skewer the meat to hold its shape.

  3. Dredge the meat with coarse sea salt and black pepper.

  4. Place the meat on a rack in a dripping pan.

  5. Add hot water to the bottom of the pan.

  6. Roast in a hot oven at 400°F (200°C) until browned.

  7. Reduce the heat and cook more slowly until done.
