Beef Loaf

Why it works: Pork and beef match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,690 recipes. Both carry 12-methyltridecanal, which smells tallowy, beefy. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mix all ingredients together in a large bowl.

  2. Shape the mixture into a loaf and place it in a baking pan.

  3. Dredge the top with salt, pepper, and flour.

  4. Dot the top with bits of butter.

Bake

  1. Bake in a hot oven at 400°F (200°C) until browned.

  2. Once browned, add hot water to the bottom of the pan.

  3. Baste every fifteen minutes.

  4. Bake a large loaf for one hour and small ones for half an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak, ground
Provides the main meaty body that holds the loaf together and gives it its flavor.
Breadcrumbs
Absorb juices and liquid, helping the loaf stay tender and moist rather than dense.
Egg
Binds the mixture so the loaf holds its shape when sliced.
Cooked rice
Adds bulk and soaks up moisture, keeping the loaf softer and lighter inside.
Flour
Dusted on top, it helps the surface brown and form a crust.

The step that matters

Adding hot water to the pan after browning. Once the top has browned, water in the bottom of the pan turns to steam and keeps the loaf moist while it finishes cooking. Basting every fifteen minutes adds more moisture, so the surface stays rich instead of drying out.

Swap the sage

How well each one fits the dish's main ingredients (pork, pepper, egg, flour, rice, beef, onion):

  1. Turmericfits better
  2. Garlicfits better
  3. Parsleyfits better
  4. Sagethe original

Fit is the average pairing score against pork, pepper, egg, flour, rice, beef, onion. Candidates are from the same food group and used in at least 100 recipes.
