Pork Steaks

Ingredients

Directions

  1. Cut pork steaks from the loin or neck, about ½ inch thick.

  2. Season with pepper and broil, turning often.

  3. When nearly done, sprinkle with coarse sea salt and rub with butter.

  4. Serve immediately after removing from heat.

  5. For sausages, chop fat and lean pork together, season with sage, pepper, and salt, and add allspice if desired.

  6. Fill cleaned hog casings with the mixture, or keep in a small covered pan.

  7. Dust with a little flour before frying.

  8. Serve sausages with stewed red cabbage or mashed potatoes, pricking them with a fork before cooking to prevent bursting.
