Ingredients

Directions

  1. Combine cold fowl or veal, scraped ham, fat bacon, beef suet, sausage, and crumbs of bread in a bowl.

  2. Add chopped parsley, white pepper, coarse sea salt, nutmeg, and beaten yolk and white of eggs to bind the mixture.

  3. For a seafood variation, include oysters and mushrooms, along with anchovy, tarragon, savoury, pennyroyal, knotted marjoram, thyme, basil, yolks of hard eggs, cayenne, garlic, shallot, chives, and spices.

  4. Mix thoroughly until consistent enough to cut with a knife, but not dry or heavy.
