Brown Bread

Why it works: Rye and flour match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 1,320 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the dough

  1. In a bowl, mix rye flour and cornmeal.

  2. In a separate bowl, dissolve yeast and sugar in warm water.

  3. Combine the yeast mixture with the flour mixture.

  4. Add salt and knead until smooth.

  5. Let the dough rise in a warm place until doubled in size.

Shape and bake

  1. Shape the dough into a loaf and place it in a greased pan.

  2. Let it rise again for about 30 minutes.

  3. Bake in a preheated oven at 350°F (175°C) for 30-40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rye flour
Adds a dense, earthy structure and flavor to the loaf.
Cornmeal
Adds coarse texture and a slightly grainy crumb.
Yeast
Produces gas that makes the dough rise and become airy.
Sugar
Feeds the yeast and helps the crust brown during baking.
Water
Hydrates the flours and activates the yeast, forming the dough.

The step that matters

Let the dough rise until doubled. Yeast needs time and warmth to produce enough gas to lighten the dough. Rye flour has less gluten than wheat, so the rise may be slower and the loaf denser if it is cut short.
