What each ingredient does

Lemon rinds
Steeping in rum extracts aromatic oils from the peel, giving the punch its lemon fragrance.
Rum
Acts as the spirit base, carrying the flavours and preserving the punch.
Lemon juice
Adds acidity that balances the sugar and sharpens the overall flavour.
Sugar
Adds sweetness that balances the acidity and the strength of the rum.
Milk
Its proteins bind with the acid and settle out, clarifying the punch and softening its harshness.

The step that matters

Stirring in the boiling milk. Hot milk meeting acidic lemon juice curdles, and the proteins carry tannins and solids down with them. This curd is what clears the punch, so the milk should be added while boiling and the mixture left to stand undisturbed.
