Ingredients

Directions

The book says “a moderately quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Soak the barley in cold water overnight.

  2. Drain the water and place the barley in an earthen pudding dish.

  3. Pour the boiling water over the barley and add salt if desired.

Bake and serve

  1. Bake at 400°F (200°C) for about 2½ hours, or until soft and water is absorbed.

  2. Halfway through baking, mix in the sugar and grated lemon peel.

  3. Serve warm or mold in cups and serve cold with cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Barley
Its starch swells and softens during long baking, thickening the water into a creamy pudding.
Sugar
Adds sweetness and helps the pudding brown slightly as it bakes.
Grated lemon peel
Adds aroma and a bright citrus flavour from its fragrant oils.

The step that matters

Baking until the barley is soft and the water is absorbed. Barley starch needs prolonged heat and moisture to gelatinise fully. Stopping early leaves firm grains and excess liquid, so the cook should check texture rather than rely only on the time.
