Hop Yeast

Ingredients

Directions

  1. Put hops in a granite-ware kettle and pour boiling water over them.

  2. Simmer for about five minutes.

  3. In a separate bowl, stir flour with a little cold water to form a smooth paste.

  4. Strain the hop infusion through a cloth into the flour paste, stirring continuously.

  5. Boil the mixture for a few minutes until it thickens, stirring constantly.

  6. Transfer to a large bowl, add salt and sugar, and let cool to blood heat.

  7. Stir in the lively yeast and mix well.

  8. Cover with a napkin and let it stand in a warm place for 24 hours, beating back occasionally as it rises.

  9. Once fermentation stops, transfer to a scalded jar, cover closely, and store in a cool place.
