Ingredients

Directions

  1. Flavor the sugar by rubbing it over the orange skins.

  2. Peel the oranges, remove the white rind, and cut into small pieces, discarding seeds and pith.

  3. Put the orange pulp in a bowl set over boiling water.

  4. Stir in the cornstarch mixed with water and cook until thickened.

  5. Beat the egg yolk with 2 tablespoons of sugar, then gradually stir into the orange mixture.

  6. Cook for 2-3 minutes longer, then remove from heat and cool.

  7. Spread the orange mixture between the cake layers.

  8. For the meringue, beat the egg white with 2 tablespoons of sugar until stiff.

  9. Spread the meringue on top of the cake.
