Beet Coffee

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the beets thoroughly without scraping them.

  2. Slice the beets and brown them in a 350°F (175°C) oven, being careful not to burn.

  3. Once browned, break the beets into small pieces.

  4. Steep the pieces in hot water like ordinary coffee.
