To Sterilize Milk for Immediate Use

  1. Pour the milk into the inner dish of a double boiler.

  2. Fill the outer vessel with boiling water.

  3. Cover and heat the milk rapidly to near boiling point.

  4. Keep the water in the outer boiler boiling for 30 minutes.

  5. Remove from heat and cool quickly by pouring into shallow dishes.

  6. Place the dishes in cold water, changing the water frequently, or use ice.
