Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Its starch thickens the water into a soft, porridge-like gruel as it simmers.

The step that matters

Parboiling the barley. Briefly boiling the grains first and then discarding that water removes surface impurities and loose starch, giving a cleaner-tasting gruel with a better texture.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (barley, milk, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against barley, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
