What each ingredient does

Tomatoes
Provide the main body, acidity and fresh tomato flavour of the soup.
Vegetable broth
Supplies the liquid that cooks the vermicelli and carries the soup's flavour.
Vermicelli
Thickens the soup slightly as its starch releases and gives it a noodle texture.
Onion
Builds a sweet, savoury base as it softens in the oil.
Garlic
Adds aroma and savoury depth when sautéed briefly in oil.

The step that matters

Add vermicelli and cook until tender. Vermicelli is thin and cooks quickly, and its starch keeps absorbing liquid and can turn the soup mushy if simmered too long. Check for tenderness near the 8-minute mark.

  4. Clovethe original

Fit is the average pairing score against tomato, onion, garlic, olive, pepper, basil. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
