Why it works: Almond and barley share more aroma than cooks usually use. They rank in the top 5% of all ingredient pairs, and cooks put them together in 78 recipes. Both carry acetylpyrazine, which smells roast. The science ↓

What each ingredient does

Blanched almonds
Provide the nutty flavour and body that give the drink its milky character.
Pearl barley
Releases starch and flavour into the water during simmering, giving the drink its body.
Sugar
Adds sweetness to balance the nutty and grainy flavours.

The step that matters

Blending the almonds until smooth. Finely blended almonds release more flavour and body into the liquid. Coarse pieces stay gritty and settle out, so the drink tastes thin and sandy.
