What each ingredient does

Gum arabic
Dissolves into the water to thicken it and give it a light, syrupy body.

The step that matters

Keeping the pitcher warm until the gum dissolves. Gum arabic dissolves slowly, and gentle sustained warmth helps it disperse fully into the water. If the gum is left as lumps, the drink will be grainy and uneven in texture.
