Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and dissolves during cooking to thicken the milk into a pudding.
Milk
Forms the creamy liquid base that the tapioca thickens.
Eggs
Enrich the custard with richness and help set it, while whipped whites add lightness.
Powdered sugar
Adds sweetness and balances the flavour of the eggs and milk.

The step that matters

Folding in the egg whites. Whites must be beaten until stiff and folded in while the mixture is nearly cold. If the pudding is still hot, the foam collapses and the whites lose their lift and airy texture.
