Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bermuda arrowroot
Thickens the milk into a smooth, creamy custard base as it heats.
Sugar
Adds sweetness and softens the texture of the frozen ice cream.
Rich cream
Adds fat, which makes the ice cream richer and smoother on the palate.

The step that matters

Pour the arrowroot mixture into the boiling milk, stirring gently to prevent lumps.. Starch clumps when it meets hot liquid before it is dispersed. Stirring steadily as you add it spreads the starch evenly so the base thickens smoothly.

Swap the arrowroot

How well each one fits the dish's main ingredients (milk, sugar, cream):

  1. Potatofits better
  2. Sweet potatofits about as well
  3. Capsicumfits about as well
  4. Arrowrootthe original

Fit is the average pairing score against milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
