Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cover the bottom of a pudding pan with crust.

  2. Chop fresh beef or mutton finely and stew with enough water to cover until tender.

Assemble and bake

  1. Layer the meat in the pan, adding a few slices of potatoes, coarse sea salt, black pepper, and a little butter or suet.

  2. Continue layering until the pan is full, finishing with a crust on top.

  3. Bake in a slow oven at 300°F (150°C) for half an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef or mutton
Provides the main savoury body and rich meaty flavour of the pudding.
Potatoes
Add starch and bulk, softening as they bake and giving the filling body.
Butter or suet
Adds fat that enriches the filling and keeps the meat moist as it bakes.

The step that matters

Stewing the meat until tender. The meat is baked only half an hour, so it must be cooked through and softened beforehand. Stewing in water breaks down connective tissue and avoids a tough, underdone filling.

Swap the potato

How well each one fits the dish's main ingredients (beef, pepper, butter):

  1. Potatothe original
  2. Onionfits about as well
  3. Capsicumfits about as well
  4. Tomatofits less well

Fit is the average pairing score against beef, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
