Carrots a LA Turque

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Boil the fine slices of carrots until tender.

  2. Prepare ½ pound of rice in some gravy until it swells.

  3. Mix the rice with ½ pound of butter and 3 eggs, and season with coarse sea salt.

Assemble and bake

  1. Form a ring with the rice around a dish and place the carrots inside.

  2. Spread any remaining rice on top and smooth it out.

  3. Pour some gravy over the dish and cover it with the yolk of an egg.

  4. Dot with butter and sprinkle with bread crumbs.

  5. Bake in a 400°F (200°C) oven for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Swells in gravy and sets with the eggs to form the body of the bake.
Butter
Adds richness and moisture, and browns on the surface in the oven.
Eggs
Bind the rice mixture so it holds its shape when baked.
Carrots
Provide the sweet, tender vegetable filling inside the rice ring.

The step that matters

Forming the rice ring around the carrots. Rice that is packed too loosely or too thinly can crack or spread during baking, so the carrots may be exposed. Pressing the rice firmly and evenly keeps the ring intact and holds the filling in place as the eggs set.

Swap the carrot

How well each one fits the dish's main ingredients (rice, butter, egg, bread):
