Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chocolate
Provides the main flavor and, as it melts into the milk, the rich body of the cream.
Egg yolks
Thicken the mixture and help it set firm when chilled.
Egg whites
Whipped and folded in, they add lightness and airy texture.
Butter
Adds fat for a smooth, silky mouthfeel.
Sugar
Sweetens the cream and balances the bitterness of the chocolate.

The step that matters

Folding in the beaten egg whites. Egg whites hold air only when whipped, and deflating them by stirring vigorously makes the cream dense. Fold gently with a spatula so the lightness survives chilling.
