Gooseberries Done Like Hops

Ingredients

Directions

  1. Cut the tops of the gooseberries across and halfway down in four petals.

  2. Remove the seeds without breaking the skins.

  3. Scrape fine long thorns and skewer the gooseberries one over the other, placing them in water as you string them.

  4. In a preserving pan, combine the gooseberries with an equal weight of white sugar.

  5. Boil until the gooseberries become clear, then transfer them to dessert pots.
