What each ingredient does

Chicken
Provides the main protein and body of the dish, pounded into a smooth paste.
Milk
Adds moisture and creaminess, loosening the paste into a thick, drinkable texture.

The step that matters

Pounding the chicken to a paste. If the meat is not pounded finely enough, it stays fibrous and the mixture will feel grainy rather than smooth. Chicken that is cooked through but still moist pounds more evenly than dry, overcooked meat.
