Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Stuffed Eggs

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Boil the eggs hard, then cut them in half and carefully remove the yolks.

  2. Mash the yolks and mix in the minced onion, parsley, pepper, salt, and soaked bread.

  3. Bind the mixture with the raw egg yolk.

Stuff and bake

  1. Stuff each egg half with the mixture to resemble a whole yolk.

  2. Spread any remaining mixture in the bottom of a pie dish.

  3. Arrange the stuffed egg halves symmetrically in the dish and brown in a 350°F (175°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the whites that hold the stuffing and the yolks that form the filling base.
Bread soaked in milk
Adds moisture and softness, keeping the filling tender and spreadable.
Raw egg yolk
Binds the mashed yolk mixture together so it holds its shape when stuffed.
Onion
Adds savory flavour and aroma to the filling.

The step that matters

Binding the mixture with the raw egg yolk. The raw yolk is the only binder, so the filling must be mixed evenly until smooth. Uneven mixing leaves dry or loose pockets that crumble or leak when stuffed and baked.

Swap the onion

How well each one fits the dish's main ingredients (egg, parsley, pepper, bread, milk):

  1. Capsicumfits better
  2. Carrotfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against egg, parsley, pepper, bread, milk. Candidates are from the same food group and used in at least 100 recipes.
