Tapioca Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tapioca

  1. Soak the tapioca overnight, then drain the water.

Make the custard

  1. In a pot, combine the tapioca and milk, and boil for 10 minutes.

  2. Beat the egg yolks, then mix in the sugar and desiccated coconut.

  3. Stir the egg mixture into the boiling milk and cook for 5 more minutes.

  4. Pour the mixture into a dish.

Top and bake

  1. Beat the egg whites with sugar until stiff, then spread over the top.

  2. Sprinkle with additional coconut and brown in a 350°F (175°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the custard its body and slightly chewy texture.
Milk
Forms the base of the custard and carries the tapioca as it softens and thickens.
Egg yolks
Enrich and set the custard, adding richness and a smooth, tender texture.
Egg whites
Whipped with sugar to form a stiff topping that browns in the oven.
Sugar
Sweetens the custard and helps the whipped egg whites hold their stiff structure.

The step that matters

Stir the egg mixture into the boiling milk. Adding the eggs to very hot milk can scramble them. Stirring constantly while the mixture cooks for 5 minutes keeps the yolks smooth and evenly thickened.

Swap the coconut

How well each one fits the dish's main ingredients (milk, egg, sugar):

  3. Raisinfits better
  4. Coconutthe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
