Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whipped cream
Adds light, airy body and moisture to the filling.
Egg whites
Whipped to stiff peaks, they lighten the filling and give it volume.
Gelatine
Sets the dessert so it holds its shape when chilled.
Lady fingers
Soft sponge layers that absorb moisture and form the dish's structure.
Sponge cake
Lines the dish, adding a soft, absorbent base for the filling.

The step that matters

Folding in the egg whites. Stiff egg whites deflate quickly when overmixed. Folding gently keeps the air trapped in the foam, so the filling stays light instead of dense.
