Ingredients

Directions

Make the candy

  1. Boil the water in a saucepan.

  2. Add the sugar, cream of tartar, and butter; do not stir after it comes to a boil.

  3. Test the mixture by dropping a small amount into cold water; it should harden.

  4. Once ready, remove from heat and flavor with vanilla.

Shape and finish

  1. Use a chopping knife to cut the candy into pieces the size of caramels.

  2. If desired, pull the candy while mixing in chocolate.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet base that sets into a firm candy as the syrup cools.
Cream of tartar
Acidity that helps keep the sugar syrup smooth and prevents crystallizing.
Butter
Adds fat for a softer, richer texture in the finished candy.

The step that matters

Do not stir after the mixture boils. Stirring a boiling sugar syrup encourages sugar crystals to form, which makes the candy grainy instead of smooth. Leaving it undisturbed keeps the texture even.

How well each one fits the dish's main ingredients (sugar, cream, butter, vanilla, chocolate):
