Why it works: Milk and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓

Ingredients
Directions
Prepare the oysters
Drain the oysters through a colander for five minutes and discard the liquor.
Pour 1 pint of boiling water over the oysters, then discard the water.
Make the soup
Add the drained liquor and 1 pint of boiling water to a porcelain-lined saucepan.
Boil until all the scum rises and is skimmed off.
Add ½ pint of fresh milk, the powdered water cracker, butter, salt, and pepper.
Boil for 10 minutes.
Finish and serve
Just before serving, add the oysters and let them scald for 3 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Oysters
- Provide the main flavour and tender texture of the soup.
- Milk
- Adds creaminess and a smooth, rich body to the broth.
- Butter
- Adds fat, which gives richness and a silky mouthfeel.
- Water cracker
- Its starch thickens the liquid slightly as it heats.
The step that matters
Add the oysters last. Oysters toughen and shrink when held at a boil for long. Adding them just before serving and only scalding them keeps them plump and tender.
