Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shin
Provides meaty flavor, and its connective tissue softens into body during long simmering.
Onions
Caramelize as they brown, adding sweetness, colour and savory depth to the gravy.
Butter
Carries fat for frying and browning, adding richness and a toasted, buttery flavor.
Flour
Its starch swells in the hot liquid and thickens the gravy.

The step that matters

Browning the onions and beef. Maillard browning creates the gravy's colour and savory flavor, and it needs enough heat and a fairly dry surface. Crowded or wet pans steam the ingredients instead, leaving them grey and bland.

Swap the clove

How well each one fits the dish's main ingredients (butter, onion, beef, pepper, flour):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against butter, onion, beef, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
