Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Mutton Patties

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut the mutton into slices, then mince it finely along with the onion.

  2. Season the mixture with pepper and salt, and add any available gravy to moisten it.

Assemble the patties

  1. Roll out the puff pastry thinly and line patty pans with it.

  2. Stamp out rounds of pastry to cover the pans, then fill them with the minced mixture.

  3. Wet the edges of the pastry, place the tops on, and brush with beaten egg yolk.

Bake

  1. Bake in a preheated oven at 400°F (200°C) for about 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast mutton
Forms the savory, meaty filling that gives the patties their main flavor.
Onion
Adds moisture and sweetness to the minced filling as it softens.
Puff pastry
Its layers puff and separate in the oven, forming a flaky, crisp shell.
Egg
Beaten egg brushed on top promotes golden browning on the pastry.

The step that matters

Wet the pastry edges before sealing. Moisture helps the pastry edges bond, so the lids seal and the filling stays enclosed while baking. Without a good seal, juices can leak out and the pastry may open up.

Swap the onion

How well each one fits the dish's main ingredients (mutton, pepper, egg):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against mutton, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
