Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Mix the flour with the milk to form a smooth batter.

  3. Whisk the eggs well and add them to the batter.

  4. Pour the batter into a well-buttered pie dish.

Assemble and bake

  1. Wipe the apples, cut them in halves, and remove the cores.

  2. Place the apples in the batter with the rind facing up.

  3. Sprinkle the suet and a little nutmeg on top.

  4. Bake for 1 hour.

  5. Serve covered with sifted loaf sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and help it set into a custard-like structure as it bakes.
Flour
Thickens the milk and eggs so the batter holds together around the apples.
Milk
Provides moisture and liquid that cooks with the eggs and flour into the batter.
Apples
Add moisture, tartness and fruity flavour as they soften in the baking batter.
Suet
Adds richness and fat that bakes into the top of the pudding.
