Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the batter into a custard-like structure as they cook and help it rise.
Flour
Thickens the milk and gives the pudding its body and structure.
Milk
Forms the liquid base that the flour and eggs set within during baking.
Butter
Adds richness and a tender texture to the baked batter.

The step that matters

Mix the flour with cold milk before adding the hot milk. Flour mixed directly into hot liquid forms lumps because its starch swells unevenly. Blending it smoothly with a little cold milk first lets the starch disperse so the batter bakes evenly.
