Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare good puff-paste and roll it out to ½ inch thick.

  2. Line some good-sized patty pans with the pastry.

  3. Fill the pastry with mincemeat and cover with more pastry.

  4. Trim the edges close to the tin and place the pies in a preheated oven at 400°F (200°C).

  5. Bake for 25 minutes or until golden.

  6. Brush the tops with beaten egg white and sprinkle with pounded sugar.

  7. Return to the oven for 1-2 minutes to dry the egg.

  8. Serve hot on a white doily.
