Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the bulk of the dish and softens into tender strands when boiled and stewed.
Butter
Adds richness and fat, carrying flavour and helping the cabbage warm through smoothly.
Gravy
Adds moisture and savoury depth as the cabbage stews.

The step that matters

Pressing the cabbage dry. Excess water left in the boiled cabbage would dilute the butter and gravy and make the stew soggy. Pressing it in a cloth removes that water so the cabbage can absorb the butter and seasoning.

Swap the chive

How well each one fits the dish's main ingredients (cabbage, pepper, butter):

  1. Cauliflowerfits better
  2. Capsicumfits about as well
  3. Leekfits about as well
