Asparagus Loaves

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the loaves

  1. Preheat oven to 400°F (200°C).

  2. Make an opening at the top of each loaf and remove the inside.

  3. Fry the loaves until golden brown.

Make the filling

  1. Boil the asparagus until tender, reserving a few whole stalks.

  2. Chop the remaining asparagus into small pieces.

  3. In a saucepan, combine chopped asparagus, cream, butter, flour, salt, cayenne pepper, and nutmeg.

  4. Heat the mixture until it thickens.

Assemble and serve

  1. Fill the loaves with the asparagus mixture and place the whole stalks on top for decoration.

  2. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Asparagus
Provides the main vegetable filling and its fresh, green flavour.
Cream
Adds moisture and richness, helping the filling become smooth and thick.
Butter
Adds fat for richness and a silky mouthfeel in the filling.
All-purpose flour
Thickens the cream mixture as it heats, giving the filling body.
Baker's bread
Forms the hollowed edible shell that holds the filling.

The step that matters

Heat the mixture until it thickens. Flour needs to be heated in the liquid so its starch swells and thickens the sauce. Stopping too early leaves a thin filling, while overheating can scorch the cream and butter on the pan's base.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, cream, butter, flour, pepper, nutmeg):

  1. Spinachfits better

Fit is the average pairing score against bread, cream, butter, flour, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
