To Prepare Mince Meat

Ingredients

Directions

  1. Boil the meat a day before chopping.

  2. Carefully separate the suet from the skin and strings, then chop it finely.

  3. Rinse currants in several waters to remove grit, then pick them over.

  4. Stone and chop the raisins, preferably using sultana raisins.

  5. Grate the rind from the lemons and mix it with the lemon juice and other ingredients.

  6. Pack the mince meat tightly in jars and cover with a bladder or brandy paper.

  7. When serving, add a little brandy and sugar to the meat.

  8. Prepare the apples separately when making the pies for a fresher taste.
