Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the bony parts of veal for a long time; remove the bones.

  2. Thicken and season the gravy with pepper, coarse sea salt, and butter.

  3. Line a pie dish with the crust.

  4. Layer in small pieces of veal, pulverized crackers, sliced potatoes, hard-boiled egg slices, lean ham, salt pork, a dusting of clove or nutmeg, and oysters if desired.

  5. Repeat the layers until the dish is full.

  6. Pour in as much gravy as it will hold and cover with a decorative crust.

  7. Bake at 350°F (175°C) for 1 to 2 hours.

  8. Serve hot with the remaining gravy and grape jelly.
