Ingredients

Directions

Prepare the filling

  1. Clean the giblets thoroughly.

  2. Stew the giblets with water, onion, black pepper, and sweet herbs until nearly done.

  3. Let the mixture cool.

  4. If there aren't enough giblets to fill the pie dish, add a piece of beef steak, veal, mutton, or lamb.

Bake and serve

  1. Pour the stew liquid over the giblet mixture and cover with a pastry crust.

  2. Bake until the crust is golden brown.

  3. Once done, add cream on top.

  4. Serve with sliced potatoes if desired.

What each ingredient does

Goose or duck giblets
