What each ingredient does

White sugar
Sweetens the preserve and, when boiled down, helps it thicken and keep.
Strawberries
Provide the fruit flavor and most of the body of the preserve.

The step that matters

Boiling the syrup with the strawberries. Boiling evaporates water and concentrates the sugar and the fruit's natural pectin, which is what lets the preserve thicken and set as it cools. Too little boiling leaves it runny, and skimming off scum keeps the preserve clear and pure in flavor.
