Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Releases juices and gelatin as it simmers, giving the gravy body and savory depth.
Onions
Stew down and brown slowly, adding sweetness and color to the gravy.
Fat
Carries heat into the pot and helps the onions and meat brown rather than steam.
Cold water
Forms the liquid base that extracts flavor from the beef and onions during simmering.

The step that matters

Browning the onions without burning them. Slow, moderate heat lets sugars in the onions caramelize into brown flavor. Too much heat scorches them, leaving bitter notes that carry into the finished gravy.

Swap the onion

How well each one fits the dish's main ingredients (butter, beef, pepper):

  1. Potatofits about as well
  2. Onionthe original
  3. Capsicumfits about as well
  4. Tomatofits about as well

Fit is the average pairing score against butter, beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
