To Preserve Eggs

Ingredients

Directions

  1. Fill a deep earthen vessel with fresh-laid eggs, small ends downwards.

  2. In another vessel, mix quicklime with enough water to achieve a thick cream consistency.

  3. Let the lime and water mixture stand for 2-3 days, stirring frequently.

  4. Once thick enough, pour the mixture over the eggs, filling the vessel completely.

  5. Store the egg vessel in a stable, undisturbed corner.

  6. The eggs will keep well for an extended period.
