Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Braise the meat

  1. Cover the meat with boiling water in a bean pot.

  2. Place the cover on the bean pot and cook in a 350°F (175°C) oven for 2 hours.

  3. Add the carrots, potatoes, and onion, along with the salt.

  4. Cook until the vegetables are tender, about 1 hour.

Serve

  1. Serve with a sauce made from 1 cup of the cooking liquid thickened with 2 tablespoons of flour.

What each ingredient does

Mutton or beef round or chuck steak
Long, slow cooking breaks down connective tissue, leaving the meat tender and moist.
Flour
Thickens the cooking liquid into a smooth sauce.
Carrots
Hold their shape and add sweetness as they cook in the braising liquid.
Potatoes
Soften and absorb flavour from the broth, thickening the pot slightly.
