Ingredients

Directions

Marinate

  1. Cover the beef with vinegar or the vinegar‑water mixture.

  2. Add sliced onion, bay leaves, mixed spices, and salt.

  3. Let it marinate for a week in winter or 3–4 days in summer, turning daily and keeping covered.

Cook and serve

  1. Brown the meat in fat in an enameled iron pan.

  2. Strain the marinade over the meat and cook until tender.

  3. Thicken the gravy with flour or broken ginger snaps, strain it, and pour over sliced meat.

  4. Optionally, add cream before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Rump or lower round is a lean, tough cut that becomes tender after long cooking.
Vinegar
Acidity in the marinade softens the meat and gives the gravy its sour flavour.
Flour
Starch thickens the strained marinade into a gravy that coats the sliced meat.
Ginger snaps
Crumbs thicken the gravy while adding sweetness and spice to its flavour.
Fat
Browning the meat in fat builds colour and roasted flavour on the surface.

The step that matters

Marinating time. Too short a marinade leaves the beef tough and under-flavoured, while the acid works slowly. Turning daily and keeping it covered ensures even contact with the vinegar and prevents surface spoilage.

Swap the onion

How well each one fits the dish's main ingredients (beef, vinegar, flour, cream):

  1. Horseradishfits about as well
  2. Onionthe original
  3. Shallotfits about as well
  4. Chivefits about as well

Fit is the average pairing score against beef, vinegar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
